I'm happy with this one mostly because I had almost nothing ready for it made ahead. I cooked everything in it this morning. The only thing already made were the onions.





Left back are sweet and sour cipponline, and stir fried veggies, front is a veggie burger and some pickled ginger. On the right is lemon artichoke couscous that [livejournal.com profile] throughadoor posted the recipe for a few days ago.

Yum looks delicious, I'd never have the time, thats half of my problem, I just brought some couscous for the 1st time, what CAN I do with it, low fat of course, Im on a mission again, low carbs & someone suggested couscous to me, any help would be great, Im trying to loose 20lbs, its a never ending cycle, but I read your doing well. what diet are u following,,thanks jxx

I never have time either, but I'm having to make time and do these as quickly as possible. If you can scrape out an hour or two on your day off you can get a lot done ahead that you just toss in. I'm not following any special diet, just eating healthy foods in moderation and I'm working out. I get up between four and five in the morning, that's where I've found the time to do the things I need to to be healthy. It's hard but I have to do it. I've found lunch is really bad for me, I was buying junk and high fat foods and it cost a fortune and wasn't healthy. I'd feel tired and run down in the afternoons from what I'd eaten for lunch.
As for the couscous you can do a lot with it, this recipe is just made pretty well according to package directions with lemon zest, lemon juice and chopped up artichokes from a can (not marinated) in it with hot pepper flakes in it as well.

Thanks so much for this, Ill try the couscous for sure, yes lunch is always the hardest for me as well, with 5 kids I cook lots of BIG meals, that feed everyone, but are to high in carbs for me, so by the time its time for me to eat, I'm to tired, so I snack or eat lots of toast & tea instead lol, but Im going shopping tomorrow & Ill get the stuff in, lots of vegies & salad stuff, all the best, I wish you well, our cold weather is coming, I need to diet through Winter,,later Jackie.xx

& I can't walk, I have a torn tendon in my left heel, of to the doctors again tomorrow, it sucks.

Sure, it's the small box of couscous (the ones that uses 2 cups of water to a whole box of couscous.) Make according to package directions but add the zest and juice of a lemon and a pinch of safforn (optional) to the water as well. Once at a boil add the couscous, one can finely shopped non-marinated artichoke hearts and some hot pepper flakes. I actually just sprinkled those on in the bento. Salt and pepper to taste. It's a little colourless, even with the saffron on top. It would probably benefit from either decoration on top or maybe some peas or something in it.

Do you make the onions (if so, how, I love onions and those look like they are sweet)?

You may have to start a Bento recipe section, LOL!

I do make the onions myself and yes, they are sweet. A friend asked me for the recipe today so I'll have to type it up anyway and I'll post it. Probably at the weekend.
