I'm happy with this one mostly because I had almost nothing ready for it made ahead. I cooked everything in it this morning. The only thing already made were the onions.

As for the couscous you can do a lot with it, this recipe is just made pretty well according to package directions with lemon zest, lemon juice and chopped up artichokes from a can (not marinated) in it with hot pepper flakes in it as well.

Sure, it's the small box of couscous (the ones that uses 2 cups of water to a whole box of couscous.) Make according to package directions but add the zest and juice of a lemon and a pinch of safforn (optional) to the water as well. Once at a boil add the couscous, one can finely shopped non-marinated artichoke hearts and some hot pepper flakes. I actually just sprinkled those on in the bento. Salt and pepper to taste. It's a little colourless, even with the saffron on top. It would probably benefit from either decoration on top or maybe some peas or something in it.
