It's a harvest bento for tomorrow! I have a really long day tomorrow and I don't anticipate getting home before 9:30pm so I made more of a dinner bento for myself.







Bottom tier has a stuffed confetti squash, steamed baby bok choy (under the peas), peas, Carrots and some dried fruits. Bottom has fruit (mandarin oranges, blood orange slices, pineapple and blackberries), dried fruit in one of the dividers and mushrooms with a fig glaze.

Do you mind if I ask how long it takes you to put together these beautiful boxes? I feel like it would take me hours...you make it seem effortless!

They don't take long. The main thing is to have a basic idea of what you're going to do and use either things made ahead or things that are quick to cook. This took about 30 minutes.

I started with the squash, I poked it with a fork a few times and put it in the microwave for 7 minutes. While it was cooking I sliced the carrots and mushrooms and got the mushrooms cooking in a suate pan with some butter. I put the bok choy in my rice cooker steamer basket and turned it on. By then the squash was done and I put the carrots in the micro for 2 minutes and finished the mushrooms with a drizzle of fig glaze. I used stove top for the stuffing, 45 seconds in the microwave. Peas were frozen and took maybe 2 minutes on the stovetop. The fruit of course was easy, just from fridge to box. Only the blood orange needed slicing.
I cut off the top of the squash and scooped out the seeds, added the stuffing and into the box. Added the carrots on one side and then filled in the gaps with the bok choy and the peas. Sprinkled on dried fruit. The mushrooms went on one compartment, dried fruit in the other and then the rest of the fruit in the remaining spot and I was done. 5 minutes tops to assemble.

I've been doing it for a while now so I have a repertoire of dishes that work well and cook fast.
