Ugh

It was a very very old fashioned Easter dinner at Quinn's house:

Assorted pre-dinner munchies (including Deviled eggs and onion dip)
Ham, potatoes, sweet potatoes, asparagus with hollandaise, biscuits and rolls. (And black bean salad)
and for dessert - individual baked alaskas with a side of your choice of cake: Chocolate, carrot, red velvet or german chocolate.

I'm stuffed. Back on the diet wagon tomorrow.

YUMMMMMM!!!! Straight out of the 50's & 60's! lol How many did you cook for? So many of my favorites on this menu! Are baked Alaskas difficult to make? I've never had one.

Super easy and yummy. Here's a good, quick, way to do it.

Buy those sponge cakes that they sell for Strawberry shortcake. You know the ones, probably full of chemicals but whatever. Early in the day take an ice cream scoop and scoop out howver many of these you're making into neat scoops (a bit smaller than the diameter of the cakes.) Wrap each scoop in plactic wrap and freeze.

After dinner while people are chatting or doing your dishes for you make a Meringue. A stand mixer helps but isn't needed. Basically whip six egg whites until frothy, add 1/2tsp cream of tarter and a pinch of salt. Whip until nearly stiff. Gradually add 3/4 cup of sugar and keep whipping until stiff and glossy.

Now pop one scoop of ice cream onto each cake. Cover totally with meringue. If you have a torch use it to brown the meringue lightly. If not pop under a super hot broiler for no more than three minutes until they take on a bit of colour. Serve at once.

Oh, and I cooked for eight today. No out of town visitors for the first time in years.

Thanks! I didn't even know there was cake in them. I thought it was just the shell with ice cream.

So, most of your family lives nearby then? I haven't lived within 500 miles of a relative in over 20 years! lol

Ham at Easter reminds of me of my Grandma (gone now about 7 years). All the other holidays we had turkey, but Grandma got ham (and scalloped potatoes) for Easter.

We would have dozens of egg hunts in the backyard throughout the day. We would find and my dad re-hide those poor eggs until they were cracked and mushy.

Yummo! I called my Mom and made her tell me everything she made. I had a virtual Easter dinner. It's really not the same. *sigh*
