While I was at work yesterday my sister and my mother did whatever could be done ahead, which was a huge help. Just got the turkey in the oven. All the stuff for my green beans is ready to go. I'm making Thomas Keller's version of green bean casserole. It's green beans in a wild mushroom cream with crispy fried shallots.


Turkey (which is actually a fairly new thing for us. It's only in the last four or five years we started having turkey for Thanksgiving)
Sausage stuffing
Mashed potatoes and gravy
Sweet potatoes (no marshmallows)
Roasted brussells sprouts
the aforementioned green beans
squash
creamed pearl onions
wild rice (which I nearly killed myself and my mother to go purchase last week)
Dinner rolls

Apple Pie
Pumpkin Pie
Birthday cake (it's my sister's birthday)
Ice Cream

I think I may need bigger dinner plates.

I'd love your green bean casserole recipe and your roasted brussels sprouts recipe, too, if you'd care to share. I don't like the sprouts but am convinced if I just hit on the right way to fix them, I could like them. Gobble-gobble!

I'll scan the green beens one, it's too long to copy out. It's from Thomas Keller who is one of the (of not the) very best chefs in America. The sprouts could not be easier, just clean them up, take off the outer leaves. Cut in half lengthwise. Toss with olive oil, black pepper and some sea salt. Pop them in a 425 oven for about 20 minutes or so (it's a hot oven so keep an eye on them. When they're getting a nice brown colour and are tender they're done. You will be amazed at how different they taste cooked like this. I also like them braised with butter and sugar or a little maple syrup.

I love sprouts. I am also making them for Thanksgiving. I roast them, but I also put in applewood bacon and chestnuts to finish. I do oil with thyme and parsley that I toss it in, pre-oven.

And Thomas Keller, I bow to him and his amazing food. :)
